Recipe Production Process


Purpose

  • Allows the Chef to create and cost their Recipes.


Enable Meal Conversion Set-up

  1. On the navigation bar click the Inventory tab and select Inventory List from the drop-down menu.

  2. Search for the first item that has to be added to the recipe

  3. Click the edit item button and scroll down to the Conversions section.

  4. Click the Enable Meal Conversion button to switch it to “On”

  5. Enter the Case Sum in the Meal Case Sum field. i.e if the item is Purchased in Case and 24 comes in a case, but the recipe requires each the Meal Case Sum will be 24

  6. Enter the Name of the item into the Meal Description Alias field

  7. Enter the Meal UOM Alias i.e if the recipe requires for the item to be in each select each from the drop-down menu.

  8. Click the update button to save

  9. Repeat step 2 to 8 until all items in the recipe are set-up correctly

  10. Once completed, the user can start to create their Kit/Recipe Template


Recipe/Kit Template Set-up

  1. Before creating a kit/recipe template, the user needs to complete the Meal Conversion process

  2. On the navigation bar click Maintenance and select Kit/Recipe Template from the drop-down menu.

  3. Click the Add Kit/Recipe button

  4. Search and select the items for the recipe

  5. Once all the items are selected, click the Kit/Recipe button

  6. The user would be redirected to the Kit/Recipe Builder page

  7. On this page the user is required to fill out the fields below:
    • Title - Name of the Recipe

    • PLU - Point of Sale code for the Recipe

    • Menu Type - Type of Kit/Recipe being created

    • Location Sold - The Location where the Kit/Recipe is Sold

    • Modifier Type - Type of Modifier being created (if applicable)

    • Portions - The Amount of portions the recipe should create

    • Portions Selling Price - The selling price for each portions

    • Source Locations - Select the location where the stock should be pulled from

    • Quantity - Enter the quantity required for the recipe based on the UOM displayed

    • Yield Percentage - Change the percentage (if applicable)

    • Update - To save

  8. Repeat step 2 to 7 until all Recipes are created


Pipeline Template Set-up

  1. Before creating a pipeline template, the user needs to complete the Kit/Recipe creation process

  2. On the navigation bar click Maintenance and select Pipeline Template from the drop-down menu.

  3. Click the Add Pipeline button

  4. Enter a Pipeline Name and click the update button

  5. Click the Add Step button

  6. On this page the user is required to fill out the fields below:
    • Name - The name of the step

    • Template - Select the Kit/Recipe template

    • Created Item - Select the Created Item for the final product

    • Final Location - Select the Location where the item would be sold

    • Waste Location - Select the Location where all wastage should go

    • Description - Enter a descriptiton noting the process of the step

    • Arrows - To move the steps if they are in the incorrect order

    • Delete - To remove step from template

  7. Click the update button to save

  8. Repeat step 5 to 7 until all the required steps are added to the Template


Production Pipeline Process

  1. Before creating a production pipeline, the user needs to complete the Pipeline Template process

  2. On the navigation bar click the Production Pipelines

  3. Click the Add Pipeline button

  4. Enter the Production Pipeline name

  5. Enter a Batch Number

  6. Select the Pipeline Template

  7. Enter the quantity which needs to be created for the batch

  8. Then click the create button

  9. On the edit production pipeline page the user is required to fill out the fields below:
    • Edit Production Pipeline name

    • Edit Batch Number

    • Select Date Target

    • Verify:
      • Final Location

      • Waste Location

      • Item Quantities

      • Waste Quantities

  10. Click the update button to save

  11. Once all the fields in step 9 have been entered and verified click the Process button

  12. Once processed the batch quantity would be added onto the final product item in the final location


Things to Know

  1. The final product must be created before creating the Pipeline Template

  2. To process the production pipeline the quantity on hand needs to be more than the item quantities and the quantities wasted

  3. Production Pipelines can be duplicated

  4. Production Pipelines can be cancelled
